Method
- In a the bowl of your stand mixer cream together the butter and sugars until well combined.
- Add eggs, vanilla, and zest.
- Then add in the remaining ingredients and mix until all are well combined.
- Refrigerate cookies for one hour before baking.
- Using a spoon or disher, shape the dough into cookies and place on a prepared cookie sheet.
- Bake for 9 minutes turning them half way through.
- Remove from oven and allow to rest on cooling rack.

Notes:
These cookies remain chewy even when they are fully cooked.
If you like your cookies to spread out more and be a larger shape then skip the refrigeration. If you like them to stay a little smaller and rise more, make sure to refrigerate.
